timing driving me CRAZY 700

hey everyone
i have a 1989 740 GL..i love it, except for one thing. i rebuilt the engine myself and need to adjust the timing. i was told that you have to take off the hose going from the air cleaner to the intake, is this true? if i try to take it off the engine stalls instantly, why is this? another thing is that no matter waht position i put the dist. cap in the timing stays the same, why? i'm only 16 yrs old, so i'm sure a lot of you out there know a whole lot more about this the i do!
any thoughts/help/suggestions are greatly appreciated
