Intermittent starting 200 1986

My 86' 240DL Wagon is a litle beauty but it does give me little problems on and off. I am trying to deal with a intermittent starting problem. Every now and then after driving and leaving it for 30 or so minutes it will turn over but not catch. After oopening the hood and checking that everything looked ok I pulled the top vacum hose off the intake manifold and heard a release of air replaced it and she started right up. Now, this got me back on the road but I want to know why this works and what I can do to fix it??????
