two sided or regular bolt? 200

The bolts that go through the exhaust manifold and into the engine are two sided bolts stock right? After time these get rusty and break off inside the engine and thats a problem. But they also get stuck in the engine, the threads rust and instead of getting the bolt off you pull the whole bolt out of the engine, which is a pain in the ass. Anyways, I was going to just replace all of the bolts only to find a bolt that is something I would get at a hardware store, just a regular bolt. Should I use a regular bolt or should I dig harder to find the original bolts, the ones that have thread on both ends and are bald in the middle? hopefully anyone reading this can understand me. thanks for the help.
