Repainting an '88 245 200

Before next month, I'm taking my car to be repainted and have little dents taken out, and I have some questions about what I should do about the black plastic paint that comes down onto some of the panels below the windows. Do you all recommend the body shop just spraying matte black paint over all the black parts, and just prepping and repainting the regular parts? Any suggestions, special mentions to the body shop before I take off all the trim/lights and drop her off at the shop on the flatbed? (should i take off interior door panels/trim?)
Thanks so much... The project is moving along smoothly. I think I'll post before/after photos of my '88 245 rehab project. Right now it's a beautiful disaster!
