Carbureted cars are much more sensitive to volatility (those light parts) than injected cars. Fuel bowls are also open to air where the sealed fuel system is closed from pump to injector nozzles. If there is no, or very little, standing water in the bottom of a steel tank to create rust... even old, stale gasoline will run the engine without damage to fuel system parts. And easily diluted with fresh fuel.

Adulterated or contaminated fuel is a different story.

BTW - after subtracting the detergent package (and in some locations, grain alcohol) .... today's gasoline is as much dino squeezins as it was 100 years ago.
