Curious questions about the cooling system and noise 700 1996

I just made a long trip, and the aux electric fan went to making noise - so I unplugged the sensor at the radiator. (side note: I had read the aux fan was only supposed the function with the air on; not so on this car. It comes on when hot, air or not).

So I upplug the fan, as I am not using the air anyway. I note that the motor seems to idle and run quieter the rest of the trip.

The question. Can a brick run a bit too cool, and noise increase. I really have the impression that this car is running too warm all the time, so this puzzles me. I have run radiator clean through it, and replaced the anifreeze. I do have yet to replace the t-stat.

Any opinions (or facts)?
