HELP - Stripped heads on Thermostat housing 900 1993

Engine is slow to warm and at freeway speeds the temp gauge drops. I suspect a "stuck open" thermostat. Bought replacement but made a mess of the torx heads trying to get the thermostat housing off. What can I do? Could I chop off the heads and try to remove the bolt stems? At least it is stuck open but I think my mpg is suffering because of it.
