Weird brake response 200 1989

I just replaced my master cylinder and, in stop-and-go-traffic, by brakes act as if the cylinder is bad. What happens is that if I ease down on the brake pedal, it travels a lot more (almost to the floor) than if I step on the pedal with a sudden effort.

Oddly enough, I cannot replicate this situation when the car is not moving (i.e., sitting in a flat parking space with the car in neutral with no emergency brake). What is going on?
