Floorpan Rust Repair....Any Tips? 200 1982

I have a few places in my floor pans that need repair due to rust.

Does anyone have any tips on this repair? I've got to get the undercoating off of the steel and get rid of the rust. The undercoating will be a pain to deal with I suspect. What guage steel should be used for the repair?
