The two round air filters are original/correct for a 68. That doesn't necessarily mean they are the best possible setup.

The little hose from the fuel bowl to the jet should be solidly attached at both ends, but allow the threaded part to rotate where it screws into the side of the bowl. It should not pull off easily. It may be necessary to replace the whole jet/hose assembly to solve this problem, or it might be possible to improvise something. Better safe than sorry though, with something containing fuel, located directly over the exhaust manifold.

The jets should move freely up and down in the carburetor bodies. This is how the cold start enrichment works. When you pull the "choke" knob, the cable and linkage lowers the jets, allowing extra fuel to be drawn into the cold engine. There is no choke butterfly to reduce the air flow.
