stupid idle, no start unless floored - wtf? 200 1983

ever since her resurrection about 2 months ago, rover's had some problems with her idle. she runs fine, but at a stop then rpms will drop from 1000 to about 500 and go back and forth like that until off we drive. starting yesterday, the idle was going crazy - it would drop down to below 500, then rev to ??? but enough to make the car twist. of course she didn't do this while i was inside to see the rpm range, but it was all over the place.
today she turned over but the engine wouldn't catch. i checked the wires, fuses, hoses, everything, and she still wouldn't start - until i floored the gas pedal and would run if i kept the pedal pressed. once i left off she died. i adjusted (ok, adjusting is a minor thing - this was more like a 'twist the crap out of') the throtle cable and now things seem to be ok... anybody know what's going on - and what i need to do to keep from getting stranded?
