heater control valve 700

I need to replace the upper heater hose in my 1990 740. I got a set years ago and now that I need them I have a question. I am expected to cut the inlet hose at the point where I insert the control valve, right? I see that FCP Groton shows the same hose and says "heater valve goes in this hose".

Also, I'm curious. I removed the heater control valve to try to pin down my leak and inserted a pipe there. So I expect the hot water will circulate all the time. But when the car is warmed up, moving the heat control slide inside still changes the air coming out from cold to hot. I can hear a door moving when this happens. So does that slide control both the water flow and a door causing air to flow over the core?

Thanks
