Temp Guage Rising when pushing accelerator, bypassing the temp compensation board didn't help 200

Just developed a new problem on my 1986 245 DL. On the way to work, I glanced down and noticed the temp guage rising to the red. I immediately pulled over and turned the car off. I opened the hood, no signs of overheating, everything seemed normal. So I limped home with the heater on and I noticed that sometimes when I would push the accelerator, the temp would rise very quickly, but as soon as I let off the gas, the temp would quickly return to 9 o'clock.

When I got home, I let the engine cool, then I started it. The fan came on, the top radiator hose stayed cool until the guage hit 9 o'clock then the top hose got too hot to touch for very long. The bottom radiator hose eventually got warm as did the radiator itself. Visibly nothing is wrong, no coolant is leaking and the fan is running fine and the engine is purring away. No belts are broken and appear to be tight. The overflow coolant tank cap is tight and it is full of coolant. The temp is staying at 9 o'clock so I decide to drive it. For about 5 minutes all is normal and the temp stays at 9 o'clock, then it starts rising and cooling with the accelerator. I quickly stop and check everything over, the hoses and radiator are still hot and it doesn't appear to be close to boiling over. Still, I run the heater and let it cool down and slowly drive home.

So after searching these boards, I decide to bypass the temperature regulation board. This changes nothing. The temp guage still does the exact same thing, sticks at 9 o'clock for a while and then starts climbing and dropping with the accelerator pedal.

The thermostat appears to be working and was changed about 2k miles ago in October. The hoses are all in good condition. The radiator is a few years old and all metal. The water pump was changed a few years ago and has maybe 15k miles on it.

What should I do next. Can the engine really heat up and cool so quickly? What should I check next.
