Which thermostat ? 200 1981

What thermostat do you guys run in your 240's? My 1981 B21F had a stuck-open thermostat and I replaced it with one marked 87C, though it came in a Carquest box marked 195F/90C. The old one turned out to be an 82C. Anyway, the temperature gauge needle now sits about a quarter inch hotter on the gauge than it did before. Should I change to a different stat? I live where winter days average about 35-45 degrees with the coldest nights being about 20 degrees. Summers get over 100 about 10 times with 90+ being very common.
