Cold Weather Electrical Gremlin 200

I replaced both the FI and ignition wiring harnesses in my 87 240 last spring.
Now, with the weather growing colder for the first time, I'm getting these "drop outs" where the car won't rev. These episodes last from a few seconds to a couple of minutes. The car will idle, and does not kill, but will not rev. All of a sudden, power comes back and I'm on down the road.

I'm thinking this sounds like intermittent contact on one of the connections on the new wiring looms, or else perhaps the symptom of an AMM dropping into limp home mode.

Any ideas?
