How much stop-leak is too much?

I think you will find that most of us will not use the stuff. Having said that BARRS seems to work the best.

More then two bottles and you are risking clogging up other coolant passages, in my opinion. With Volvo's it's tough because you only have the Overflow tank to put it in. Car with radiator caps, you can get the car warmed up so the coolant is flowing nicely past the Fill Cap and you can slowly pour the stuff in. Drain a 1/2 gallon of coolant out of the car, then mix up the BARRS with a 1/2 gallon, then pour it in the Overflow. this way it quickly gets down into the radiator and on it's path to the leak.

It is temporary at best., It might also take a week or so to pack up against the leak.
Next Coolant change will bring your leak back...if it stopped it at all.
