You want to make sure that you don't introduce air into the system, so if you drain coolant out of the radiator to change the thermostat, refill the head before installing thermostat and refill radiator prior to starting the engine - your gauge may pin at HOT until the thermostat opens and you "burp" the air out of the engine.
