To me that sounds like a bad sensor, rather than an effect of the ECU "readapting" to anything.

The sensor is basically a voltage generator. The ECU can't influence the sensor directly, just the fuel mixture affecting the amount of voltage the sensor generates. If the sensor is sending an extremely lean .05v signal, the ECU should go extremely rich with the mixture in response. In which case, a good sensor's voltage signal would show a corresponding rise in its voltage output.
