Wayward Temp Gauge 200

I have a 1992 240 sedan that runs fine. But once you've been running the car about 10 minutes the needle on the temperature gauge starts creeping up from its comforting position at the midpoint on the gauge (or just a tick under midpoint) all the way up to the orange "overheating" area of the gauge.

It gets ever so close to the orange, then falls back down very quickly (in 15 seconds or so). This always happens after running for the first 10 minutes, but can happen suddenly on the highway when I've been cruising normally for an hour, too. Is my thermostat flaky? Any ideas?
