Pretty much. Except that technically you'd call the switch "closed" when electricity can flow through (when it's cold) and "open" when electricity won't flow (seat is hot). AFAIK, it's much the same way a toaster operates. When the circuit is engergized, the little wire in the switch heats up, expands and moves. It's calibrated such that when it reaches a certain temperature the circuit is broken.
