Brown stuff in engine oil

I changed the oil in my 86 turbo wagon (700) and have driven it about 300 miles. when I checked it the other day I noticed what looked like a spot of brownish stuff on the bottom of the stick. It reminded me of some copper anti seize stuff I bought years ago. Well I have watched it for a hundred more miles and it seems that there is more there. I am kind of fearing that could this be water? The water tank is a notch lower than it was in the summer. But this brown stuff doesn't look like water or anti freeze. If it is water does this mean the head gasket is bad? The car has 188k of non abused miles on it. And if it is the head gasket can I just remove head and put on new gasket to fix? Doug
