Checking for Head Warpage 700

Working on a 91- 780 Bertone with the B230FT motor. It had obvious problems with water getting into the oil. Have pulled the head and did not find any glaring problems with head gasket. Was told to check head for warpage with-out much detail on procedure. I don't see anything in 700-900 FAQ about this, but I do see advice to have head re-surfaced.
Just wondering about proper procedure to check for warpage ??
Also wondering - are turbo and non-turbo heads the same??
