I would use Dynamat or one of the much cheaper knock offs.
Carbon Fiber Can be used but so can Fiberglass and even Kevlar might be cheaper. Unless you are willing to Vaccum bag it and/or are really good at doing composite layup's it would be too much trouble and too costly.

Personally if money was no object id do a sandwich wall with honeycomb fiber in between and aluminum on the inside of the car.

Good luck, go with dynamat or Fat Mat, brown bread etc. insulations.
