STILL overheating ... contemplating suicide 200

cross post on turbobricks... thought i'd post here too. see this thread for reference during my initial attempts to solve this problem:

1978 242 B21F...

new thermostat.
new radiator.
new coolant.
new coolant temp sender.
new water pump.
new spark plugs.
new plug wires.

had head cleaned and rebuilt.
new head gasket.
whole coolant system flushed of all sediment (inc. heater core)

tried 3 gauges & all read the same
tried new wire from the sender to the gauge - same

upper radiator hose is hot (thermostat open).
fan is spinning and pulling air.
system is holding pressure.

water pump is pumping (crack the thermostat housing and lots of coolant comes out, quickly.

start the car. temp gauge goes up, and just keeps on going up until it heads the red and I shut it down.

why
