regarding your brakes:with the complexity of the work you did on the car body rebuilding your own calipers should be simple the only issue would be pitted pistons.I use a Wilwood single line master cyl.($50.)and am very happy with it. Triumph gt6 spitfire suppliers(Canley classics) sell a spacer to go between the halves of the 3 piston Girling caliper to accomadate vented rotors -a common and plenifull upgrade. a similar spacer for the 4piston caliper would be an inexpensive setup for wented rotors. remove the stock rotors from the hubs and see what is available at Pick n pull so you can use the Ford rims.
