the Mikuni's however do not have the bridge

That's meaningless. Get one of your HIF6 SU's, open the piston & the throttle to the limit and guess what the biggest restriction is? I can tell you that it's the throttle & shaft.

The first step to seeing if the Mikunis can work for your application is to get your inlet port flowed tested, then attach the Mikuni to the head & flow test it again. That will save you an enormous amount of time & effort.

If you had HS40 Mikunis, I'd be excited for you. They don't have a throttle or shaft at all. They flow a lot of air.

If there is some way of using the HIF6's with the current set up then yes I would use them

I don't understand why you aren't using them. Did you actually read HIF6 on them?
