switching to carbs 140-160

I have a '74 145. pretty nice But I swear I'm getting tried of working on the CIS fuel injection what is the concensus out there: should I switch over to carbs or what? I'm guessing I'll lose 10 percent fuel ecomony. From what I gather it's possible to put just one carb on instead of two: Right? I know I'll sufer power with just one carb but will I get better gas milage with just one carb? HELP!!
