exhaust manifold gasket - which side faces head? 900

I see Jorrell is online-

you once posted about "metal stackup style factory gasket or the aftermarket piece with fiber and metal rings around the exhaust holes? Note that the fiber flavor will blow out quickly no matter what you do!"

I have a 95 940 B230FD (all the pollution gadgetry). A leak developed at forward most exhaust port. Loosened down pipe, removed exh manifold. the 4 FCP Groton manifold gaskets are shiny flat steel on one side, and some type of high temp material fiber material on the opposite side with what appears to be a black tar like substance impregnated into it.

My question is, which side faces the head? the flat shiny metal or the black fiberboard side?

Also, ditto for the manifold to downpipe gasket. I have one that is shiny flat steel on both sides and another that is flat dull steel on one side and a dimpled surface on the opposite side (it has hundreds of small indentations in the silver fibrous material. which side goes to the manifold and which side to the downpipe?
