Sounds like you have done a very solid job of troubleshooting the problems and even gone above and beyond. I would be pulling hair myself if I had done all that.

About the only thing I don't see on the list and you may have already checked it is the fan clutch. You say you have a parts car, might be worth a few minutes with a 10mm wrench to swap it out and see if that does anything for you. I replaced Inga's fan clutch with a swamp cooler (AKA Tropical Fan Clutch) a couple of years ago and my temps dropped from 9:45-10:00 down to 9:00 right away and have stayed there. Might be a long shot but wanted to toss that out there.

If you want to eliminate the gauge, you can get a Vision VDO water temp gauge for $25 and the sending units run from $9 to $20 from egauges.com or Summit Racing. That is not a lot of money to put your mind at rest.
