Issues with a '67 manifold 120-130

I'm playing with a '67 twin manifold with out the secondary butterflys.

I am trying to pull the manifold out, clean it up and reinstall it. I have noticed that there were two manifold gaskets (between the head and manifold) in there. Is there any reason for this? I'm wondering if the manifold is warped and this was to get it to seal up. I have not got it apart far enough to put a straight edge on it.

Also I can't get one of the three bolt out that holds the manifold to the exhaust pipe flange. The nut and stud just seem to spin in the casting but will not come out. Do I try to cut off the nut get the manifold out of the car and then figure it would be easier to see what is going on?
