Normally the "engine" temp and the water temp are about the same and it depends on what
thermostat you have in your engine's water outlet, assuming a functioning cooling system.
Most folks use thermostats in the range of 180-190°F or around 90-95°C.
Depending on how long the engine has been running, how much load it is under, how fast
the car is moving and ambient air temp, the oil temp could be anything from ambient to
as much as 100°F above the water/engine temp. It is good for the oil temp to occasionally
(or frequently) get above the boiling point so the condensed water vapor is boiled off,
rendering the oil less corrosive.
