What can cause a twitching dash temp gauge? 700

Hello everybody. I had a twitchy temp gauge with my previously failing engine and it's twitching with the new one too. I found the connector on my harness was in pretty bad shape, and the new engine came with bits and pieces of its harness attached. I swapped in the replacement engine's harness and have similar twitching. Also, my gas gauge stopped working a while back, on the off chance that something can affect the two things.

So I'm thinking the things that can cause a twitching temp gauge are:
Wiring to and from the temp sensor
The temp sensor being partially immersed in coolant, but not completely
The temp sensor failing
A wiring fault in the gauge itself.

Have I forgotten anything? Is there anything like electrolytic capacitors that can fail in the instrument cluster?
Since I did not use my old temp gauge, and I think it's unlikely the two would fail in the exact same way, I think the temp gauge itself is not the problem. I also think the sensor's connector is not to blame.

I've also always wanted to disable the temp compensation on the temp gauge. I'd like a raw, analog temp gauge.
