Which thermostat for hot climates?? 700 1989

I need to replace the thermostat on Wifemobile (89 740 sedan). It has the 82 degree C. one in place right now, but the only one listed by parts store is 92 degrees C. Is this one too hot to run in Texas?
I thought that hotter running means better fuel mileage, is this true?
Surprisingly the thermostat from PeppyGuys is the same one from FCPGroton. And at about the same price.
But they only offer the 92 degree thermostat.
Should I wait to install the 82 or the 87 for Texas driving??
