Is there a test to determine if the coolant temperature sensor is defective?

I'm trying to help a buddy with his 240, He had A/C system charged. ostensibly by a professional shop now experiencing over heating issues, while using A/C Temp gauge indicates mid way for reading. but if trying to increase speed car shuts down, like the engine stops running. Went to radiator shop they observed water flow, i.e. water pump and T-state evidently working OK. We live in AZ. where today it finally hit 101 but this isn't even summer yet. So no, help like well Hell bill turn the A/C off. when it hits 125 you don't just want A/C you need A/C.
drained coolant and installed fresh factory diluted coolant. I'm at the proverbial brick wall no pun intended har har. fat cat thanks guys
