142 or 1800 or maybe 122 for project car???

I am graduating soon and I am looking to take on a project car. I am hoping to spend no more then $2k on a car that runs with little rust. I think at this point I am set on a Volvo. I will not do a 4 door sedan, but I would consider a wagon. Here are some priorities and I was wondering which car is better for:

1) car that I can learn to wrench on

2) A 'cool' car that you do not see every day, or every other day for that matter!

3) quirky car that is fun to drive

4) I would like a fast car eventually but in the short term it simply needs the potential to be a good handling car.

5) Price is more or less an issue

6) Would any of the mentioned cars be easier to swap a engine from a later turbo volvo?

Also, I am in colorado if anyone knows of any cars
