temperature needle 200 1987

Purchased a 87 240 about a month ago for a daily driver. It needs some work but for the most part it's in good shape. Again needs some TLC which I'm doing little by little since it can add up.

But I keep forgetting to ask the mechanic and noticed it happened today. But the temperature needle randomly goes up and down when I"m driving the car. There are days when it just stays normal, then others when it goes all the way up, then back to normal etc...Anyone know the problem?

Also, just happened today but when I start the car it makes this high pitched sound. Any ideas?

Finally, the AC compressor is out and was wondering if this is imperative to repair? I keep getting different answers. Aside from wanting AC is there any other reason this must be fixed? Thanks!
