After doing a careful install of a reconditioned engine in my 49 Dodge truck I had a similar problem, investigation on the side of the road led me to find the blue shop paper towel that I had carefully shoved into the upper radiator hose to keep stuff from falling in there during the engine work, once I took it out, no more overheating!
But yes, verify that your gauge is reding correctly as well.
