740 front brakes - how to disconnect lines to caliper 700 1991

I'm replacing my front calipers. How do I disconnect the brakes lines without twisting them? I don't understand why there is 2 connections for each hose. How can I tell if I have ABS or not? I can identify that they are Girling because of the brake pad. Thanks.
