removing lower radiator hose w/o getting hosed? 200 1993

Bean reading up and getting ready for a coolant drain and change since I'm at the 2 yr mark. Removing the lower radiator hose seems straightforward enough to me 'til I peeked down on it while standing in front of the car... I noticed more stuff in the way than I anticipated! I know I gotta remove the engine cover down under there for access but my question is, how do you take that hose off and get coolant aimed toward a pan in time to collect it without gushing a Niagra Falls of coolant all over the place? It looks to me like the front of the engine bay has a metal flange protruding pretty far underneath the radiator and I can already envision myself trying to pull that hose off and futilely aim while a geyser of coolant spews forth... Any particular tips I might try? Just gotta use especially fast hands?
