Carbs, SU's vers Weber Verse Mikuni 120-130 1965

hey all and thanks for the input about carbs, I recently installed a 67/8 VP B20 into my 65 122s and need to dial in my twin SU's. I have lots of info on how to do it and feel confident in my abilities to do so. They were rebuilt recently by Chester out in Colorado. My question is and this stems from the notion to 'set it and forget it' which are the most trouble free carbs to work with? I have heard and read about the performance differences between the three and have also heard and read about how all 3 can be great to have and also how all 3 will keep you busy under the hood. Im fine with my SU's but was wondering all the same about maintenance expectations, thanks, Bone
