Thermostat Replacement 240 in Arizona desert 200 1993

Ah, my new adoptee is trying to adjust from SoCal to Arizona desert. We're having a few issues....and I'm still a noooobeeeee :(
1993 240 wagon
Thermostat replacement: specifically for Arizona desert (goodness gracious, great balls of fire! It can get to the 120's here in the summer!) What degree thermostat would y'all recommend?
I had pretty much decided in Wahler, but have read a rash of comments about frequent failure. Should I stick with Wahler anyway or is there another brand you'd recommend?
In what situation should housing be replaced?
Any other pertinent info?
As usual, looking forward to feedback...hoping to get this ordered (w/comp board) by tomorrow...
