Better tire and rim question.... 120-130

OK so I did some research, and tires and rims are not a favorite subject for me...
120s have a 1"+ offset, so I guess what I need to know is how far in/out can a tire ride in the wheel wells? To me this would be the distance from the mating surface of the hub inward and the max e distance outward. I could make these measurements but thought if someone knew them that would be easier... I guess real world info of the tire size and rim offset used that worked on an amazon would also help.
IPD has a decent page of info, but known combos that work would be appreciated... ie a American stock alloy rim that looks good and is not too $$
