thermostats which is correct 120-130

I just replaced my thermostat with one that opens at 180 degrees. I chose this before I found literature suggesting one that would start to open at 163 degrees to be fully open at 193 degrees. Running the car around it now seems to run hotter than before, according to the in dash gauge anyway. It's colder now and think this may be a problem in the warmer weather. What do you think? Which one would be a better choice?
