My experience with early and late 140 dashboards is the temperature gauge runs half way between min and max with the correct thermostat. 180°F is pretty close to 85°C which is half way. The first line is 70°C, second line is 100°C and are adjustable if you have the time. Details in the greenbook.

I would hope your electric fan(s) are attached to the condenser, they should run while the AC is on and if you have an electric OD, I would use the 4th gear switch to turn them off.

Thermostats: I recycle original Volvo thermostats, because I've never had any luck with aftermarket, but I would take what product Planetman says is good. With a motor that could do mid 14 second quarters, the stock radiator with just an electric fan was no problem and I ran with a broken radiator cap! Temperature range here is from 0° to 45°C. Warmup distance for a good thermostat is 2 miles in winter, less in summer.
