The engine harness has ground slices about 4-6 inches inside where the black overwrap starts below intake manifold. These grounds are a pinch weld type connection and are noted for giving problems. You would be well advised to cut the black outer wrap and then solder these splices on both the black and brown sets. The temp sensor is not likely it if it reads okay via ohmmeter check.

Are you checking it between cyl head and each pin, one at a time?

On that sesnor the pins are each a circuit, one for fuel inj and the other for ignition. Each pin's resistance should be the spec you are using (2520-2780 ohms @ 68F, 20C et cetera) between the body of sensor and each pin.
