Rear rotors brand?Handbrake adj possible while replacing rotor? 700 90

ATE,Brembo,etc which one is better,seems that the rear calipers are ATE,seems logical to use ATE pads and rotors also.

Can someone verify whether it is possible to adjust the parking handbrake while doing the rear rotor change instead of doing it on the back side of the centre console/cupholder.Seems to have read it somewhere that it's possible to adj while doing the rotors.
