So...How hot can my oil get? New B20

I thought I had this problem fixed when I went to the 160F thermostat. The water temp sits right at 185 only going up about 5F on a long uphill climb to my house. The motor now has 250 miles and I just adjusted the valves and attached a new lead to the newly installed oil temp sender from an 1800.

Well, altho the water temp is steady thep poil temp continues to rise over time on the road and after about 10 minutes of twisty mountain roads the oil was indicating 250F and slowly rising to hover just shy of 260.

Isn't that too damn hot?
