once opened brake fluid 200 83

"do not use old brake fluid as it absorbs water" Can anyone define old for me in this case? I have a bottle of brake fluid that I used once, then put the lid back on and oput it on the shelf. Is it old? What is the difference between this and the brake fluid in a master cylinder that has the cap off for a few minutes?
