How To Tell When Fan Thermostat Goes 200 90

I've decided to return the electric fan and stick with the mechanical. Now I'd like to know what does one do to test the thermostat controlled clutch in the fan assembly? Seems to me it should free wheel above a certain MPH, and engage during times like traffic lights etc. But how to check to see if it's working correctly?
