One further thought. It sounds like the foot valve in the master cylinder is not always working right. A little contamination or a worn seal in the valve might come and go. Have you had someone operate the clutch when the problem appears and watched to see whether the fluid was pumping back to the reservoir, or measured the travel of the actuating rod at the slave cylinder?
